There are several ways to avoid the caffeine in coffee, the most obvious of which is avoid.
Rather than have you adopt this option the industry now can offer you the choice of coffee that has been "decaffeinated" - but note that this is not the same as "caffeine free". The process is not 100% efficient so while the level of caffeine is <99% that of regular coffee it is not caffeine free. A wee disclaimer to keep us all on the path of veracity, dontcha just love pedants!
Our offering is decaffeinted using the super-critical CO2 process, we have chosen this for the pragmatic reason that it is less expensive than the water process version and the coffee beans from the process roast better.

We roast the beans to slightly higher than our medium roast - however they tend to look darker, a consequence we suspect of the fact that the process of decaffeination does alter the unroasted coffee.
